- 4 artichokes
- Coarse salt & pepper
- 10 tbsp. olive oil
- 3 tbsp. balsamic vinegar
- 1 tbsp. old fashioned mustard
- 30 drops of raspberry flavouring
- 10 drops of lemon flavouring
Preparation:
- Break off the tails of the artichokes and cut flush underneath. Remove the largest leaves from the outside of the artichokes.
- Heat 2 liters of water and add coarse salt.
- Immerse the artichokes and cook for 30 minutes at a simmer.
- Meanwhile, whisk the vinegar with the salt and pepper.
- Whisk in the mustard, oil and flavourings.
- Set aside, then drain the artichokes head down and serve them warm with the vinaigrette.
