Carpaccio of shrimps with pineapple flavor

  • 1 tablespoon of olive oil
  • 1 cm of fresh ginger
  • 1 tsp of Nuoc Màm sauce
  • 400g raw shrimps
  • Sweet and sour chilli sauce
  • 6 drops of pineapple flavor

Preparation:

  1. Peel the shrimp, cut them in half lengthwise and remove the abdomen.
  2. Prepare a vinaigrette based on oil, Nuöc Màm, grated ginger and lemon juice and pineapple flavoring.
  3. Flatten ½ shrimp gently before lining them up on a soup plate and cover with a little of the dressing, let marinate 20 min.
  4. Sprinkle with dill or chervil and accompany with a small ramekin of Sweet and Sour sauce or eat them plain.
