Cauliflower Gratin with Black Truffle Flavour

  • 1 cauliflower
  • 50 cl of milk
  • salt and pepper
  • 25 g of flour
  • 25 g of butter
  • 100 g grated Gruyere cheese
  • 1 tsp. coffee of natural truffle flavouring (water soluble)

Preparation:

1. Cook cauliflower in a pot of boiling salted water until tender. Drain and set aside.

2. Melt butter in a saucepan. Add flour and mix.

3. Gradually pour in the milk, stirring with a whisk.

4. Add the natural black truffle aroma, salt and pepper.

5. Let cook about ten minutes on low heat while mixing until the sauce is thick.

6. Preheat the oven to 180° C.

7. In a gratin dish spread your cauliflower florets, pour the bechamel and sprinkle with Gruyere cheese.

8. Bake for 30 minutes and serve.
