Chocolate mousse with Raspberry and Passion Fruit flavors

  • 3 eggs
  • 100g of chocolate
  • 5 drops of Raspberry flavouring
  • 10 drops of passion fruit flavor

Preparation:

  1. Separate the egg whites from the yolks. Melt the chocolate in a double boiler.
  2. Mix the yolks and sugar in a bowl until the mixture turns white. Add the flavors and then the chocolate little by little.
  3. Beat the egg whites until stiff.
  4. Gently add the whites to the mixture with a spatula.
  5. Pour into verrines. Chill for at least 2 hours. Grate some chocolate before tasting.
