- 1 knob of butter
- 2 bunches of green asparagus
- 2 glasses of fresh cream
- 1 shallot, peeled A little coarse salt
- 1 tbsp. fresh hazelnut flavor
Preparation:
1. Peel the asparagus and cut it into slices. Bring a large quantity of water to a boil with a pinch of coarse salt.
2. Put the asparagus in the hot water for 2 to 3 minutes and keep warm.
3. In a saucepan, put the butter and then add the chopped shallots. Add the asparagus slices and cook them for 5 minutes.
4. Add water to cover everything and place your bouquet garni.
5. Cook for 10 to 15 minutes.
6. Remove some of the water, blend and add the fresh cream and fresh hazelnut flavor.
7. 7. Put in the fridge for about 1 hour before tasting!
