- 1 purple onion
- A few cherries
- 750g of green beans
- 3 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- 5 drops of cherry flavouring
Preparation:
- Throw the beans into a pot of boiling salted water and cook for about 10min.
- Check for doneness with a knife, drain and plunge into a vat of cold water with ice cubes so they retain their color.
- Mix the olive oil, vinegar, cherry and lemon flavouring in a bowl.
- Season with salt and pepper and place the cooled beans in a bowl.
- Add the minced purple onion and the vinaigrette.
- Add a few cherries. Mix well and set aside in the refrigerator.
- Serve chilled.
