Hummus with beet and lemon zest

  • 1 beet
  • Olive oil,
  • salt and pepper
  • 1 clove of garlic
  • 260g of chickpea
  • 1 half bunch of flat parsley
  • A bit of chopped corriander
  • 1 tbsp. heavy cream
  • 1 tbsp. lemon flavouring

Preparation:

1. Cut the beet into large chunks and put them in the bowl of a blender.

2. Add the crushed garlic.

3. Add the chickpeas, the chopped coriander and a spoonful of fresh cream.

4. Add a tablespoon of lemon flavouring.

5. Blend at medium speed, adding the olive oil little by little.

Add salt and pepper.
