- 3 eggs
- 125g of sugar
- 200g of butter
- 250g of flour
- 1/2 packet of yeast
- 2 untreated yellow lemons
- 1 teaspoon coconut flavoring
- 1/2 teaspoon lime flavoring
Preparation:
- Cut 180 g of butter into small pieces in a bowl and soften in a double boiler. Wash the 2 lemons.
- Using a peeler, remove the zest from the first lemon and chop it finely. Cut the second lemon into thin slices.
- Set aside.
- Pour the sugar into the softened butter and whisk to obtain a creamy consistency.
- Add eggs one at a time, mixing well each time.
- Add the flavourings.
- Then add flour, yeast, 1 pinch of salt and chopped zest little by little.
- Stir well.
- Preheat oven to 210°C (T. 7) Line a cake pan with buttered parchment paper on both sides.
- Pour the batter into the pan and place the reserved lemon slices on top, overlapping them slightly. Place in the oven.
- After 10 minutes of cooking, lower the thermostat to 5 (150°) and continue cooking for 35 minutes.
- Turn out the cake as soon as it comes out of the oven and let it cool on a rack.
