I discoverMelon mousse with natural citrus flavor
2 melons
1 lemon juice
20 cl of full cream
30 g of powdered sugar
2 sheets of gelatin
2 teaspoons of citrus flavoring
1. In a bowl of cold water, dip your gelatins to soften them
2. Cut a melon in half and remove the seeds, save the pulp and place it in a blender bowl and blend until finely pureed before setting aside.
3. In a saucepan, bring the lemon juice to a boil. Add the gelatin leaves and stir until they melt.
4. Now pour the lemon juice into your melon puree along with the 2 teaspoons of natural citrus flavoring and stir.
5. Whip the cream and add the powdered sugar.
6. Incorporate your melon puree.
7. Finally, divide the mousse into 4 verrines and set aside in the refrigerator for 3 hours.
8. Cut the second melon into slices and place a slice or two on each plate.
