- 600 g fresh cheese
- 200 g ground Speculoos
- 150 g of sugar
- 100 g of heavy cream
- 25 g flour or cornflour
- 20 cl of milk
- 50 g of melted butter
- 3 Eggs
- 1 untreated lemon
- 2 teaspoons of natural blueberry flavor
1. Crumble your speculoos into powder. Melt your butter. 2. Mix the speculoos and melted butter in a baking pan. Let it bake for about 10 minutes at 180°. 3. Add your cheese in a bowl, mix by adding little by little the fresh cream, the lemon zest, the sugar and the eggs one by one. 4. Add the sifted flour and milk gradually while stirring. 5. Add the natural blueberry flavouring to your preparation. 6. Pour your preparation on your speculoos cake base. 7. Preheat the oven to 210° and bake the cheesecake for 10 minutes. 8. Leave it in the oven for 1 hour and lower the temperature to 90°. 9. Keep the cheesecake for another hour in the turned off oven and then place it in your fridge until the next day.
