Organic Mango Flavored Cheesecake

For the crust:

  • 1 half teaspoon nutmeg
  • 250 grams of crumbled cookies
  • 125 grams of melted soft butter

For the filling :

  • 3 eggs
  • 25 cl of fresh cream
  • 500 g cottage cheese
  • 2 tbsp. flour
  • 150 g of sugar of semolina
  • 1 tsp. tablespoon of natural mango flavor

Preparation:

1. Preheat oven to 180°C (gas mark 6).

2. Line a 23 cm diameter pan with greaseproof paper and butter.

3. Mix the cookies, nutmeg and melted butter.

4. Line the bottom of the pan with the mixture, packing well with the back of a spoon. Place in refrigerator.

5. Whisk the faisselle with a whisk until smooth, then add the sugar and flour and the eggs one by one.

6. Then add the cream and the organic mango flavouring.

7. Pour this mixture over the cookie crust.

8. Bake for 50-55 minutes until the cheese mixture is firm to the touch.

9. Let cool, remove from pan and serve chilled.
