Poached cod fillet with coconut milk and natural lime flavor

4 backs of cod

40 cl of coconut milk

Pink berries

1/3 red onion

1 leek very fine

Salt

3 tablespoons of lime flavouring

Preparation:

1. wash the leek and cut it into sections.

2. Dip it in boiling water for about 5 minutes (it should be tender) before draining it and setting it aside.

3. finely chop the red onion

4. Pour the coconut milk into a frying pan with the tablespoons of lime flavouring, a little salt and the onions.

Cook over medium heat.

6. when the coconut milk is boiling, lower the heat and put the cod backs in the pan for about ten minutes, basting the fish regularly with the sauce.

7. At 2-3 minutes from the end, add the leeks!

8. Once ready, place in a soup plate with rice for example.
