Shrimp, guacamole and natural mango flavor bites

For the blinis:
  • 300 g Greek yogurt
  • 2 eggs
  • 200 g flour
  • 1 packet of baking powder

For the guacamole :

  • 2 ripe avocados
  • 1 lime
  • ½ red onion
  • 1 small pepper
  • 1 bunch of coriander
  • olive oil
  • salt and pepper

For the shrimp:

  • 350 g shrimp tails
  • ½ tsp. smoked paprika
  • ½ tsp. cumin
  • ½ tsp. salt
  • 1 pinch cayenne pepper
  • 2 teaspoons natural mango flavor

Preparation of the blinis :

1. mix all ingredients in a bowl then cover with cling film and let stand for 1 hour in the fridge.

2. Cook the blinis in small batches in a pan with a little oil.

3. You will know the blinis are ready to be flipped when the dough makes little "holes".

To prepare the guacamole:

1. Finely chop the onion, chilli and coriander.

2. Peel the avocados and mash them with a fork.

3. Add lime juice, onion, chili and cilantro.

4. Mix and chill.

Prepare the shrimp:

1. Peel the shrimp tails before putting them in a bowl with the spices and mix well.

2. Cook in a hot pan for 2/3 minutes and glaze with natural mango flavor.

Assembly:

Simply spoon the guacamole over the blinis, add a shrimp tail, a coriander leaf and a pinch of fleur de sel.
