Thai style mussels with lime flavour

  • 1 bird pepper
  • 50g of butter
  • 1 tablespoon of olive oil
  • 75 cl of red wine
  • 1 stick of lemongrass
  • 5 cl sesame oil
  • 30g of fresh ginger
  • 10 cl of sweet soy sauce
  • 400g of mussels from Bouchot
  • 5 drops of lime flavouring

Preparation:

  1. Heat sesame oil in a saucepan, sauté ginger, lemongrass and chili for 2 minutes over low heat.
  2. Add mussels, stir, add soy sauce and cover.
  3. Cook over low heat for 5 minutes (mussels should be open).
  4. Add 5 drops of lime extract.
  5. Stir once more.
  6. Serve in a soup plate.
