I discoverVegetarian Pad Thai with smoked tofu and natural lime flavouring
350 g rice tagliatelle
200 g smoked tofu (plain or sesame almonds)
100 g broccoli
2 kale leaves
100 g white cabbage
2 carrots
1 clove of garlic
1 onion
120 g roasted peanuts
3 tablespoons sunflower or sesame oil)
80 g fresh coriander
60 ml shoyu
2 tablespoons of rice vinegar
1 tablespoon of chilli sauce
2 tablespoons whole cane sugar
1 teaspoon turmeric powder
1 teaspoon of ginger powder
1 tablespoon of natural lime flavouring
Preparation:
1. Start by washing and cutting the cabbage and onion into thin strips. Then, detach and cut the broccoli flowers.
2. Then chop the garlic, grate the carrots and crush the peanuts.
3. in a hot frying pan or wok, pour 2 tablespoons of oil and fry the smoked tofu, previously cut into small cubes, until golden.
4. Boil water in a large pot, add the rice tagliatelle and soak for 3-4 min.
5. In a bowl, mix the ingredients for the sauce.
In the wok, sweat the minced onion with 1 tablespoon of oil. Then add the garlic and the tablespoon of natural lime flavouring and the vegetables. Cook over high heat for 5 to 10 minutes.
Add tagliatelle and tofu and stir.
Pour in 1/3 of the sauce, continue to stir for 1 to 2 minutes, repeat the process and cook for 5 to 7 minutes until the tagliatelle are al dente.
9. Serve and sprinkle with peanuts and chopped coriander. Enjoy hot!
