Yogurt verrine with vanilla whipped cream and exotic fruit meringue

  • 4 meringues
  • 4 stirred yogurts
  • 1 packet vanilla sugar
  • 50cl heavy cream
  • 3 tbsp. caster sugar
  • 1 tbsp. vanilla flavoring
  • 1/2 tsp. exotic fruit flavoring
 

Preparation:

  1. Before starting to make the whipped cream, chill all ingredients, including vanilla flavoring and utensils, in the refrigerator for 10 minutes.
  2. Pour the crème fraîche into a bowl and whip until stiff. Gently fold in the sugars, spoon by spoon, and the vanilla flavoring.
  3. Set aside in the fridge.
  4. Coarsely crush the meringues while incorporating the Exotic Fruit flavoring.
  5. Place a layer of meringue in a verrine, followed by a layer of stirred yoghurt, a layer of meringue and finally a layer of chantilly.
