Yuzu-flavored raspberry tartlets

  • 2 puff pastries
  • 1 tin raspberries
  • 1 egg yolk
  • 25cl milk
  • 50g sugar
  • 25g flour
  • 2 teaspoons yuzu flavoring

Preparation:

  1. Preheat oven to 180°C
  2. Line two tartlet moulds with the pastry discs.
  3. Prick the bottom with a fork.
  4. Bake for 20 minutes.
  5. Leave to cool when removed from the oven.
  6. Mix sugar and egg yolk.
  7. Stir in flour and half the milk.
  8. Set aside.
  9. Heat the rest of the milk in a saucepan, then add the yuzu flavoring while stirring.
  10. Cook the cream.
  11. Remove from the heat when the cream is thick enough.
  12. Leave to cool.
  13. Clean the raspberries.
  14. Fill your tartlets with the Yuzu cream.
  15. Decorate the top with the raspberries.
  16. Chill until the last minute.
